The olive herb (Santolina viridis), also called green cypress herb, is a plant species from the genus holy herb (Santolina) within the family of composite plants and originates from the Mediterranean region. Characteristic of the olive herb is the aroma of its leaves, reminiscent of pickled olives - hence the German name. The hardy olive herb is a branched, evergreen perennial semi-shrub that grows between 20 and 50 centimeters tall. Santolina viridis grows rather bushy and woody in the lower part. From June to about August, cup-shaped yellow small flowers are formed directly on the stems. They also have an olive fragrance. According to its natural habitat, olive herb should be planted in rather nutrient-poor, calcareous and well-drained soil. Ideal is a location next to rosemary, sage and lavender in the upper area or in the normal zone of a herb spiral or even in the rock garden. You can harvest the aromatic leaves of the olive herb continuously. To do this, cut off whole shoot tips with a length of five to ten centimeters. Santolina viridis can be used as a seasoning herb for marinades, sauces, pesto, salads, herb curd and butter as well as for Mediterranean meat and fish dishes. In addition, the olive herb is suitable for refining all dishes prepared with olives.
