Dukat is a particularly sweet and soft dill that is cultivated in Denmark for traditional Scandinavian dishes. The finely chopped, blue-green leaves last longer than other varieties. Fits over steamed summer vegetables, tomato slices and cucumbers, in mixed green salads and dressings, in sauces and most delicious over grilled or poached salmon and other fish. Let some plants flower to provide nectar for butterflies. The pungent seed heads can be used to flavor cucumbers.
