Endive and frisée varieties are late summer salads with a delicate bitter taste. Originating from the chicory family (Chicory), they are closely related to radicchio and chicory.

Endives are grown in summer and fall and, like other lettuces, require sufficient moisture. However, they require slightly more nutrients than lettuce. If the plants are closely spaced, the inside of the plant bleaches and turns yellow. These parts of the lettuce head taste particularly tender. As endives form a taproot, the seedlings should not be pre-cultivated for too long.
