This very cold tolerant cut/sheep cabbage variety produces beautiful curly leaves with variegated colors ranging from green to purple. It has a firm texture and good flavor. This variety was selected by Tim Peters from 10% of Siberian kale that survived the cold during an extremely severe winter in Oregon. Scheerkohl is prepared like spinach and has a mild, slightly nutty flavor. Both leaf and stem are very tender and completely usable, but stems of very large leaves should be removed before cooking. The plant is not free of erucic acid, so only tender stems can be used.

Cover the seeds with a thin layer of soil. It is possible to transplant a first time when the plants have 2 to 3 leaves, every 10 cm, so that the roots become 'hairy' before setting. Repeat this when the plants have 4 to 5 leaves. Plant 50 cm apart in all directions without burying the stem too much. For outdoor sowing, sow lightly in rows 50 cm apart (in all directions) and lighten later.
