Leek is an amaryllis plant with good heat and cold tolerance. In the first year, the thickened stem is formed for consumption. The dense root system loosens the soil for the following crop. Early cultivation for summer harvest is possible, as well as late cultivation for fall to winter harvest.

Leeks prefer deep, nutrient-rich soil. The young plants should be grown in advance and can be transplanted when they are about the thickness of a pencil. Mounding the leeks with soil ensures white, smooth leek shafts and protects winter leeks from freezing.
